Leftovers Mac n' Cheese
Here’s a great and delicious way to use up leftovers.. I made this when some unexpected guests stopped by and it went down a treat.
Ingredients: You can use any hard cheese you have available. 500g cooked elbow macaroni, 1 garlic clove (pureed), 1onion halved and thinly sliced, 4 cups of hot milk (not boiled) , ½ cup double cream, 6 tablespoons unsalted butter, 1/2 cup plain flour, 300g grated gruyere cheese, 200g grated mature Cheddar, 1 tsp fehmalee’s kitchen base seasoning,1/2 teaspoon nutmeg, 2.5 cups leftover meat & veggies (roughly chopped), ½ tsp fehmalee’s kitchen white meat seasoning, ¼ cup bread sauce (optional) Instructions:
In a large pot, melt the butter and sauté the onions and garlic until they have soften. Add the flour to the pot and whisk under low heat for 2 minutes. Then add the hot milk and double cream whisking frequently (to remove any flour lumps) and cook for 1-2 minutes until the sauce is thickened and smooth. Remove from heat
and add 200g Gruyere, 100g Cheddar, base seasoning , nutmeg, white meat seasoning and bread sauce. Stir to combine then add the cooked macaroni and leftover meat & veggies and stir well. Place the mixture in a large oven proof /gratin dish and sprinkle over the remaining cheese. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.
