West Indian No Mayo Slaw


1/4 of a small white cabbage (thinly sliced), 1 medium onion (thinly sliced), 2 carrots (grated), 1tbs caster sugar, 1 tbs apple cider vinegar, juice of 2 lemon, 1/4 tsp sea salt, 1/4 tsp ground black pepper (add more salt and pepper if desired)


In a bowl combine vinegar, lemon juice, sugar, salt and pepper. Stir until sugar has dissolved. Taste at this point to see if more salt, pepper or sugar is desired. In a large bowl add cabbage, onions and carrots. Toss to evenly combine veggies.

Then pour dressing over veggies and toss again so, it can be evenly distributed. Now Serve.
