Fehmalee's Flavour Enhancer Chicken

This is my favourite marinade for grilled chicken. Its flavoursome, simple to make and definitely one you should try for BBQ season. I like to marinade my chicken overnight for maximum flavour and tender meat.


1 medium whole chicken (butterflied- backbone and breastbone removed), zest of 1 unwaxed lemon, juice of 1/4 lemon, 2 tsp Fehmalee’s kitchen flavour enhancer, 1 tbs olive oil, 1 tsp seas salt, 1 tsp ground black peppercorn, 1 garlic clove (roughly chopped), 3 sprigs of fresh thyme, 1 small onion, 3 cherry tomatoes, 1/2 cup sweet beer/larger (cobra, red stripe, etc)


In a food processor add lemon zest, lemon juice, flavour enhancer, sea salt, ground black peppercorn, olive oil, garlic, thyme, tomatoes, onion (roughly chopped) and beer/larger blend until pureed. Place chicken in a glass baking dish and pour over marinade, massage meat, cover with cling film and place in fridge overnight. Remove chicken from fridge and allow it to get to room temperature for 1 hour. Preheat oven to 180c get your roasting tin with trivet ready and put chicken flat/winged on trivet and place in the oven. Cook for 1 hour 10 minutes or until meat juices runs clear. Cover chicken and allow it to rest for 10 minutes before chopping and serving.
