American Hazelnut Pancakes


Happy Pancake (Shrove) Day! We had American pancakes with chopped hazelnuts & Cumberland Sausage for dinner tonight. It's all about having breakfast for dinner. Yum!

Ingredients:

1 tbs baking powder, 1 tbs white sugar, 2 large eggs, 300 ml milk, 1 cup plain flour, 30 grams butter (melted and cooled), a pinch of salt, ½ tsp vanilla extract, ¼ tsp almond extract, ¼ cup chopped hazelnuts, butter for greasing frying pan

Instructions:

Combine all the ingredients (except hazelnuts) in a large mixing bowl and whisk till smooth. Place a small knob of butter in a non stick pan and with a paper towel smug and grease pan ( you just want a tiny bit of grease for cooking). Place the pan on stove under medium low heat and add 1 spoonful (dessert spoon) of pancake mix topped with a few hazelnuts.

When the upper side of the pancake is blistering and bubbling it's time to flip on the second side. Cook for about 1 minute. Then it’s time to spoon in the next pancake.

Stack pancakes, drizzle on Canadian Maple Syrup and top with any leftover hazelnuts.
