Housewife's Chicken


Here is a quick and tasty chicken recipe that requires just a few ingredients. This is my go to recipe on days I don't have time to prepare an extravagant dinner. My husband and little one loves it along side herby (fresh herbs) bulgur wheat.

Ingredients: 4 free range chicken leg & thighs (chopped into 2" pieces), 2 1/2 tbsp plain flour, 1/2 cup olive oil, 12 garlic cloves unpeeled, 150ml good white wine, 2 1/2 tsp flavour enhancer, 1 tsp salt, 1/2 tsp freshly ground black pepper (if you desire an added kick, use our island seasoning instead of black pepper)

In a bowl, combine flour, flavour enhancer, salt and pepper. Dust chicken pieces with seasoned flour toss and set aside. Heat oil in a frying pan ( to see if oil is ready, take a pinch of flour and add to pan if it sizzles your oil is ready). Add chicken pieces, turn down heat and fry gently for 15 minutes. Turn chicken to brown all sides. Add unpeeled garlic cloves to frying pan and fry them for 6 minutes. Add wine and allow to bubble until the steam no longer smells like wine. Turn down heat and simmer gently for 20-35 minutes or until chicken is cooked right through.

Remove chicken from heat. Set aside for 5-8 minutes then serve.
