Grapefruit Cooler


125g caster sugar, 4 measures water, handful of mint and extra to decorate, juice 4 large lemons, 450ml grapefruit juice, 4 ice cubes, soda water to top up


In a saucepan under low heat, add sugar and water stir until sugar dissolves. Leave to cool. Crush mint leaves and stir into the syrup. Cover and leave to infuse for 12 hours then strain into a jug. Add lemon and grapefruit juice to jug and stir well. Fill glasses with cooler add ice, top up with soda water, decorate with mint and serve.
