Guilt Free Salad


Here is my favourite go to post festive period fully loaded detox salad. It’s perfect for flushing your system just in time for St.Valentine.

Ingredients:

3 cups thinly shredded red cabbage, 1 cup thinly chopped and deveined kale leaves, 4-5 broccoli florets finely chopped, 1 organic carrot finely grated, 1 bunch of fresh cilantro leaves roughly chopped, 2 stacks of thinly sliced scallion/ spring onion, 1 avocado diced, 1 medium onion thinly sliced, 1 cup of cooked chickpeas, 1-2 beet roots diced, 1 red pepper thinly sliced, ½ a cucumber diced, 6 cherry tomato sliced, 1 handful of washed and roughly chopped fresh baby spinach, 1 tsp dried oregano.

Dressing Ingredients:
Juice and zest of 1 unwaxed lemon, ½ clove of garlic- pureed, 1/4 cup unfiltered apple cider vinegar, 2 tablespoons olive oil, ½ - 1tsp Fehmalee’s Kitchen Base Seasoning, 1tsp grated fresh ginger, 1 tbs agave nectar, 1 tsp Fehmalee’s Kitchen Flavour Enhancer.
Instructions:

In a large bowl add all the vegetable ingredients and toss to evenly combine. In a separate bowl add all the dressing ingredients whisk to combine taste and adjust dressing if needed. Add dressing to salad mix to combine then serve.
