Lobster Waldorf


500g cooked lobster meat (roughly chopped), 150 ml mayonnaise, 3 tbs lemon juice, 1 tsp fehmalee’s kitchen base seasoning, 2-3 medium gala apples (cored & medium diced), 1 tsp fehmalee’s kitchen white meat & seafood seasoning, 1 1/2 cups sliced celery, 2 shallots (thinly sliced), 1 garlic clove (pureed), 90g chopped walnuts


In a large bowl, combine the mayonnaise, base seasoning, lemon juice, garlic and seafood seasoning. Mix until smooth. Now add the apples, celery, shallots and lobster meat. Toss until fully coated, cover and chill for 30 minutes. Just before serving, toss in the walnuts and serve.
