Wild Boar Kebabs
450g wild boar medallions, 1 tbs fehmalee’s kitchen game and red meat seasoning, 1 tbs olive oil, 1 garlic clove (pureed), 1 tsp fehmalee’s kitchen base seasoning, 125g good red wine
Cut the medallions into 1-inch cubes and place in a large zip lock bag. Add the game seasoning, olive oil, garlic, base seasoning and wine. Seal and massage bag to combine ingredients then marinate in the refrigerator for 3hours or overnight. Remove the meat from the marinade and thread the meat onto metal or wooden skewers. Set aside for 1 hour to get up to room temperature before cooking. Place skewers on a baking sheet with trivet in the oven at 190C , turning frequently, for 15-25 minutes or until the meat is cooked through. Serve on pita with thinly sliced onions, sweet peppers, fresh coriander and a dollop of greek yogurt.
