Oven kissed Cherry Tomato & Basil Salad

Here’s a simple and tasty salad. A side worthy on any dinner party table.


700g cherry tomatoes, 1 garlic clove (grated), 2 tbs capers (rinsed), ¼ tsp sugar, 4 tbs olive oil, half a bunch of fresh basil (roughtly chopped), 1/4 fehmalee’s kitchen base seasoning.


Preheat oven to 200C. in a bowl add the tomatoes, garlic, capers, sugar and olive oil. Toss and transfer in to a roasting tin. Place in the oven (middle shelf) and cook for 10 minutes or until the tomatoes are hot. Once ready, remove the tomatoes form oven, sprinkle over base seasoning and gently shake to evenly coat. Tip the tomatoes in a heat proof serving bowl, scatter over basil then serve.
