Blueberry Lamb Kebabs

This blueberry marinade works a treat when you want a delicate sweet/earthy element to your meat. This recipes works well for red meats but, if you want to use it on chicken/pork, use the flavour enhancer instead of the game seasoning.

150g fresh blueberries, 1 ½ tsp fehmalee’s kitchen game/red meat seasoning, 1 garlic clove (minced), ½ a medium onion minced, 1 tsp greek yogurt, 1tsp sea salt, 1 tsp ground black peppercorn, ¼ red pepper chopped, zest of ¼ a lemon, 1 tbs olive oil, leaves of 1 sprig of fresh thyme, 1-2 tbs of water.

450g lamb leg or shoulder (cut into bite-sized chunks).

In a food processor add all the marinade ingredients and blend until pureed. Place lamb chunks in a glass baking dish and pour over marinade, massage meat and leave to marinade in the fridge (covered) for 24 hours. Remove lamb from fridge and allow it to get to room temperature for 1 hour. Preheat oven grill to 190c. Scrape off any excess marinade from meat and thread the lamb chunks onto skewers. Cook kebabs for 3-5 minutes on each side then serve.
