Feta Bruschetta

Here’s my favourite snack. It works well as a picnic treat (assemble when ready to eat) and is simple to make.


2 tbs extra virgin olive oil, 1 garlic clove (pureed), 1 red onion thinly slices, 10 cherry tomatoes + 10 plum tomatoes (chopped), ground black peppercorn, ground sea salt, 1 tbs balsamic vinegar, 1/2 pack of feta cheese (mashed so, it's spread able), 1/4 tsp Fehmalee’s kitchen flavour enhancer, 1 baguette (3/4'' slices), bunch of basil leaves (sliced).


Preheat oven to 180c. In a small bowl add olive oil and garlic stir to combine. Brush baguettes on both sides with olive oil garlic mixture. Place in oven and toast lightly on both sides. Once toasted remove from oven and set aside. In a flat glass dish add sliced tomatoes and sliced onions season with sea salt, black peppercorn and flavour enhancer, balsamic vinegar. Now it's time to assemble. If there's any olive oil mixture let add to feta cheese make sure to stir in to evenly combine. Now spread cheese over baguette, add herby tomato onion mixture on top, sprinkle on basil then dig in.
