Fehmalee's Juicy Lucy


Here’s my must have Spring /Summer BBQ guilty pleasure burger.

Ingredients:

675g fresh lean beef mince, 1 medium onion halved (one half pureed, other half finely minced), 1 smoked garlic clove pureed (unsmoked garlic is fine), 1 large egg, 4 tsp fehmalee's kitchen flavour enhancer, 1 tbs Worcestershire sauce, 1 tbs soy sauce, 1/4 tsp sea salt, 1/2 tsp ground black peppercorn, 115g grated mature cheddar cheese (or cheese of your choice), 4 lightly toasted burger buns, salad, tomatoes, gherkins/pickles if desired and condiments of choice.

Instructions:

Prepare BBQ grill (ready when charcoal is ashy) or preheat oven to 190c. In a large bowl combine evenly the beef mince, egg, pureed onion, garlic, 3 tsps of flavour enhancer, Worcestershire sauce, soy sauce, salt and ground black pepper. Form mince mixture into eight equal sized burgers and set aside. In a separate bowl combine cheese, 1 tsp flavour enhancer and finely minced garlic. Now pack 4 burgers with the grated cheese mixture leaving a clear border around the edges. Place the remaining burgers on top of the cheese topped burgers and press the edges together to seal in the cheese mixture. Flatten into proper burgers shapes 1-2 cm thick. Place on BBQ rack/oven proof grilling tray and cook for 5-10 minutes on each side until done to your liking. Once done, place on buns add desired toppings and condiments then dig in.
