Chunky Picnic Egg Salad

Spring has finally arrived and I'm already thinking of all the yummy recipes both new and classic that I'll prepared for my family at home and days out. Now that the temperature is warm yet crisp and the flowers have started to blossom, I'm ready for a picnic.

A delicious classic that's a must in my picnic basket is chunky egg salad.


9 large free range boiled eggs (chunky dices), 3/4 cup mayonnaise, 1 1/2 tsp Dijon mustard, 1 medium-small onion (finely diced), 1-2 garlic cloves (minced), 1tsp Fehmalee's Kitchen flavour enhancer, 2 sprigs of chives (chopped), 1 tbs fresh chopped dill, 4 gherkins (diced), 1 1/4 tsp sea salt, 1/4 tsp ground black peppercorn, 1/4 tsp smoked paprika, zest of ½ a lemon (unwaxed).


In a large bowl add mayonnaise, mustard, onion, garlic, flavour enhancer, chives, dill, gherkins, salt, pepper, paprika and lemon zest stir to combine. Finally add the boiled eggs and gently stir to coat thoroughly.

Serve or pack in containers.
