Mixed Berry Yogcream


It's Saturday and I'm in the mood to make a quick reasonable healthy sweet treat for the family. My yogcream is perfect for spring / summer, quick to prepare, very delicious (divine) and toddler approved.

Note: If you prefer to use fresh berries or fruit, pop them in a freezer bag and place in freezer. Once frozen it's ready for use. Yogcream also makes great yogpops for kids. To enjoy leftover yogcream that is frozen solid, thaw at room temperature for 30 minutes to soften.

Ingredients: 500g frozen berries ( I love combining blackberries, raspberries, blueberries and strawberries), 500g of greek yogurt, 250g double cream (heavy cream), 1tsp Madagascan vanilla extract with seeds, 1tbsp maple syrup, 4tbsp set honey

In a bowl whip double cream (heavy cream) until it starts to thicken (cream should form ribbons when you lift whisk) and set aside. Add berries, yogurt, double cream, vanilla extract, maple syrup and honey in a food processor or blender and whiz until fruits are at desired size (I like my yogcream mostly smooth). Empty yogcream into a liter airtight container or 2 1 pint airtight containers, cover and place in freezer for 4-6 hours. Once frozen it's ready to serve.
