Fehmalee's Favourite Salad Dressings
I love salads and enjoy creating tasty colourful mixes of salad leaves, root veggies, nuts, beans, fruits (fresh and dried) and fresh herbs. As much as I can eat my salads with a dash of lemon juice, there are days when I want just that bit more. If I have been good all week and want a more fatty dressing then my pick would be a Parmesan and Blue Cheese Dressing. This is a dream to eat and can second as a good dip (make chunky). An equally tasty go to dressing for me is the classic Balsamic Vinegar Dressing. It's quick to make and hits the spot.
Parmesan & Blue Cheese dressing (4 servings)
In a food processor add 1oz freshly grated parmesan cheese, 4oz gorgonzola cheese chunks, 1 1/2 cups mayonnaise, 1 cup double (heavy) cream, 2 tbsp. white wine vinegar, 1tsp fine sea salt, 1/2 tsp ground black pepper, 1/4 tsp Worcestershire sauce, 1/2 tsp Fehmalee's Kitchen Natural Flavour Enhancer.
Blend contents to desired texture then dress your salad.
Balsamic Vinegar Dressing (serves 4)
In a bowl or jar add 1/4 cup extra virgin olive oil, 3 tbsp. balsamic vinegar, 1/2 shallot minced, 1/2 garlic clove minced, 1/4 tsp Fehmalee's Kitchen Natural Flavour Enhancer, 1/2 tsp honey, Pinch of black pepper, pinch of salt, dash of fresh lemon juice
Whisk or close jar with lid and shake until contents are blended. Then dress your salad.
