Yummy Chicken Salad & Jacket Potato
Chicken salad with jacket potato for me falls under the category of winter warmer food. You know the foods like stews, pot pies, soups. Anything warm, rich in flavour and hearty when eaten feels like you're given a really big warm hug or snuggling under a warm blanket. My chicken salad on jacket potato does just that. It may sound simple which it is but, it's richness and heartiness is very comforting. I made it yesterday for dinner with a few additional ingredients and my husband (who is a fussy eater) loved it. There are many chicken salad recipes online that are pretty tasty well, here's another one to try.
2 Chicken breasts on bone (or 4 thighs), 1 celery stick, 1/2 large mild or sweet onion diced, 1 clove smoked garlic diced, 1 scallion/spring onion diced, 4 slices of jarred red jalapeno peppers diced, 2tbs of good mayonnaise, 1tsp sour cream (optional), 1 small handful fresh tarragon minced, 1/2 tsp flavour enhancer, 1tsp fleur de sel, 1tsp freshly ground black peppercorn, pinch of sugar, 2tbs of liquids from jarred jalapeno.
Bake chicken breast and set aside to cool. Finely dice celery, onion, garlic, scallion (spring onion) and jalapeno peppers and combine. Then add minced tarragon, flavour enhancer, fleur de sel, ground black peppercorn, mayonnaise, sour cream (optional), sugar, and liquid from jarred Jalapeno. Stir mixture and taste. Once chicken has cooled. Cut into chunky dices and stir into mixture. Cook potato in Microwave until desired texture. Remove and brush with extra virgin olive oil or butter and place in grill oven until surface is crispy. Remove from grill, split open potato and top with chicken salad. Then serve!
