Avocado & Sunstream Tomato Salad

Here's my go to Thursday lunch salad, It's quick, tasty, guilt free and made with all my favourite veggies and herbs.

1/2 Avocado, 5 sunstream tomatoes halved, 1/2 handful or parsley roughly torn, 5 basil leaved julienned, 1 scallion/spring onion sliced, 1/2 red jalapeno pepper or a few sliced ones from jarred peppers (optional) , 1/4 blue cheese (optional), pinch of fleur de sel (sea salt), pinch of black peppercorn 1/4 tsp flavour enhancer, 1 tsbl balsamic vinegar, 1 tsp extra virgin olive oil (evoo).

I like to make my dressing first. In a small bowl add the balsamic vinegar, fleur de sel, black peppercorn, flavour enhancer olive oil (evoo) whisk till combined and set aside. On serving plate add your roughly torn parsley, basil, halved tomatoes, sliced scallion/spring onion, jalapeno peppers (optional) and sliced avocado. Stir and sprinkle dressing over salad, toss then add crumbled blue cheese (optional). Then serve.
